Red Velvet Whoopie Pies

This Valentines I’m combining my two loves,

red velvet cake and whoopie pies.

My mom made my sisters and I chocolate whoopie pies for special treats growing up,

and red velvet cake was always MY birthday cake.

This combination is LOVE at first bite!

Though I have my mom’s classic red velvet recipe I could make from scratch,

I chose to grab a box of Duncan Hines Moist Deluxe Red Velvet Cake mix right from my newly organized pantry.

Red Velvet Whoopie Pie Recipe

Red Velvet Whoopie Pie – cakes

  • 1box of Duncan Hines Red Velvet Cake mix
  • 3 eggs, 1/2 cup oil, 1/2 cup water, 1/2 cup flour
  • Combine and mix with an electric mixer for 2 min.
  • spoon onto a parchment paper covered cookie sheet.
  • Bake for 8-10 minutes in a pre-heated 400 degree oven.
  • Tip: mounding teaspoon sized batter drops onto the sheet will result in puffier whoopies!

Red Velvet Whoopie Pie- frosting filling

  • 1 cup milk
  • 5 Tbl flour
  • 1 cup sugar
  • 1 cup butter
  • 1 tsp vanilla
  • Directions: In a small sauce pan slowly combine half the milk and flour and whisk until smooth. Slowly add remaining milk, turn heat on medium and constantly whisk until it thickens and looks like wallpaper paste. Allow to completely cool.
  • Cream butter & sugar mixer and add the flour paste. Beat until fluffy.

     (this frosting is one of the oldest, classic frostings for red velvet cake. Feel free to use your favorite cream cheese frosting if desired)

Time to fill your whoopie!

Spoon your frosting into a freezer bag with a taped corner and then snip off 1/2 inch.

Don’t be stingy! Pile it high!

Add your top layer and you’ve got yourself a little whoopie pie!

But these whoopies need a little bling!

So lay out your sprinkles, jimmies, and candies to dress your whoopies up.

Store your whoopies in the refrigerator, covered with plastic wrap.

  13. Hi, I'm new to your blog, I saw this post on Sweets for a Saturday and had to stop by and comment on your whoopie pies. I grew up getting these little goodies as a real treat from the Amish Markets in Pennsylvania, yours looks just as good as theirs (maybe better because with your recipe I can make them at home now!) These are adorable, and perfect for Valentine's Day! Love them!

    1. I'm sorry, I should have written it out in full. "Tbl" is short for tablespoon, sometimes you might see just a "T" which is also another way to say tablespoon. :)

    1. Hi Shannon, it's granulated sugar, and it's what the original recipe called for. I've never tried it with powdered. Maybe I will, though I think it'll require more if I do. Sugar those kiddos up!
