You won’t believe how wonderful this smells, like pumpkin pie in a cup.
The delicious aroma is only thing keeping me awake after another night of insomnia.
Someone explain this to me please…
As women, we devote our 20’s-30’s tending to children at all hours of the moonlight,
only to discover that as we near our 40’s, and the children actually sleep through the night, WE no longer can!
No wonder we are so productive. We’re awake for so many hours!
In my “productive state” early this morning, I whipped up this Autumnal Cup o’ Joe.
Pumpkin Lattes with Spiced Pumpkin Whipped Cream
(For one pot of coffee)
Sprinkle 1 teaspoon of Pumpkin Pie Spice over coffee grounds then brew as usual.
To make the whipped cream, pour one cup of heavy cream into a small bowl.
Add 1/4 cup powdered sugar, 1 teaspoon pumpkin pie spice and 1 teaspoon vanilla extract to the cream.
Whip on high speed with an electric mixer until light and fluffy.
Measure out 1/4 cup of pumpkin puree.
Add 1/4 cup canned pumpkin puree to the spiced whipped cream.
Beat for a few seconds then remove beaters and gently fold in the pumpkin until combined well.
Try not to eat the whole bowl of pumpkin cream, as tempting as it may be!
Pour coffee into your cup, sweeten as desired, and add some half & half.
Top with a generous dollop of the spiced pumpkin whipped cream and garnish with a cinnamon stick or extra dash of spice.

ReplyDeleteThis looks so amazing!! I'm definitely going to try this. For some reason, it never dawned on me to put any type of spice or flavoring in with the coffee grounds...lol. See...it's because of people like me that Starbuck's can stay in business. :)
