Creamy Chicken & Wild Rice Soup

A cold rain has been drizzling down for days now and snow is even expected later tonight which is a treat for the kiddos around this area. We rarely see snow and it usually melts within a day or two. With all this dreary weather, I’m starting to feel like a bear entering hibernation. Cold winter nights call for comfort food! So into the kitchen I go to cook up a hearty dish of Creamy Chicken & Wild Rice Soup with melted Swiss and Gruyere cheese! This soup comes is loaded with nutty wild rice and the cheese gives it a rich and decadent flavor.

Creamy Chicken & Wild Rice Soup by Sand & Sisal

Creamy Chicken & Wild Rice Soup

  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1/2 onion, diced
  • 1 tsp. minced fresh rosemary
  • 2 Tbl. olive oil
  • 3 large boneless chicken breasts, cut into cubes
  • 2 (32 oz.) containers of reduced sodium chicken broth
  • 1 box of wild rice with seasoning packet
  • 1 (8.5 oz) heat & serve pack of wild rice (I used Archer Farms- from Target)
  • roux (4 Tbl. butter & 4 Tbl. flour)
  • 1/2 cup cream or half & half
  • 2 cups shredded Swiss & gruyere cheese
  • salt & pepper to taste

Directions: In a large pot, heat the 2 Tbl. of oil over medium heat. Add in the chopped celery, onions, carrots and rosemary and sauté until tender. Season with a bit of salt and pepper. Add the cubed boneless chicken to the veggies and brown the chicken. Stir in the contents from the wild rice box and the seasoning packet that came with it. Also add heat & serve wild rice pack. Now add both containers of chicken broth. Stir and cover with lid. Reduce heat and allow to simmer for 30 minutes.

Make a roux in a small pan. Do this by melting your butter over medium low heat and then adding in your flour, stirring constantly and letting it bubble. Cook the roux for a few minutes until it starts to deepen in color. Stir your roux into the soup and allow to simmer uncovered for 10 more minutes. Turn off the heat and pour in the cream and cheese. Stir to combine and allow the cheese to melt. Garnish with a sprig of fresh rosemary, serve and enjoy!

This recipe makes enough to feed a crowd or freeze for later. My kids are very picky and gobbled this soup up!

  2. Oh my Kim. Lady you speak my language... comfort food. Calorie laden and delish!
    Southern transplant. Well I guess at 26 years of living here, the longest I have lived anywhere, does that make me Southern?? At any rate, I am a comfort food junkie. With my make up of (ready for this?) French, English and Punjabi ( warned you) my comfort food covers a wide range :-)... but I am quite partial to chicken and dumplings,and would knock you over for some corn bread and beans! I still make my curries and chai. And am still a fool for a good English roast dinner.

  6. This looks INCREDIBLE, and I totally want to make it, but I have a question about the cheese. The recipe calls for "2 cups shredded Swiss & gruyere cheese". Is that 2 cups EACH? Or two cups total - 1 cup Swiss; 1 cup Gruyere? BTW - those are two of my FAVORITE cheeses. Thanks!

    1. Thank you! No, just 2 cups total. My grocery store sells a package of the 2 cheeses together. It's wonderful! You could easily use 2 cups of what ever cheese you love also.
